classic coffee cake.

What better way to accompany a cup of coffee than with something sweet?
Nothing is better than a warm slice of coffee cake and even wash it down with a fresh cup of coffee. Double YUM! 
Now, my mom has a great coffee cake recipe, and so does Grandma ... but this recipe by the Pioneer Woman is absolutely fabulous. It's moist, soft, crumbly ... what more could you ask for?

The Best Coffee Cake EVER! 
Ingredients: 


  • 1 1/2 sticks of butter softened 
  • 2 cups scant sugar
  • 3 cups flour, sifted
  • 4 teaspoons baking powder 
  • 1 teaspoon salt
  • 1 1/4 cup whole milk 
  • 3 whole egg whites, beaten until stiff 
Topping: 

  • 1 1/2 sticks of butter softened 
  • 3/4 cups flour
  • 1 1/2 cup brown sugar 
  • 2 tablespoons cinnamon 
  • 1 1/2 cups pecans, chopped

To make: 

  • Preheat oven to 350 degrees.
  •  Sift flour, baking powder, and salt together. 
  • Beat egg whites and set aside. 
  • Cream butter and sugar, and add flour mixture and milk alternately until combined. DO NOT OVER BEAT.
  • Fold in beaten egg whites with a rubber spatula. 
  • Spread in a well greased pan, 9x13 ... (or larger!) baking pan. A cake pan with high sides would be best. 
  • In a separate bowl, combine topping ingredients with a pastry cutter until crumbly. 
  • Sprinkle all over the top, Bake for 40-45 minutes, or until no longer jiggly. SERVE WARM :)!!
